Beluga (Huso Huso) is the largest and most uncommon of
all species of sturgeon. Caviar from Beluga is the most
famous and exclusive among all Caviars, and for good
reason. It is treasured by foodies and fine diners all over
the world for its sizeable eggs with their mild, lingering
taste and rich and creamy texture. It is also exceedingly
rare, making it an unparalleled treat for the true
connoisseur. The eggs are light to dark grey in colour and
range in size from 3 to 3.5 mm.
