OSIETRA IMPERIAL

Osietra (also spelled Ossetra or Oscietra) is among the best-known types of caviar, second in popularity only to Beluga. Its scientific name is Acipenser gueldenstaedtii, also known as the Diamond or Danube sturgeon. The eggs are generally dark brown but can range up to golden. Their flavor is always salty, buttery, and distinctly nutty. The eggs are medium-sized, measuring 2.8–3 mm. Malossol indicates a product prepared by the traditional method, using minimal salt to preserve the delicate flavors and creaminess of the caviar eggs.
