KETA (Chum) is distinguished by its larger size and firmer roe membrane. It’s the second most popular type of salmon caviar, prized for its delicate flavor and characteristic “pop” when bitten. The roe measures from 5 mm, and its color is light red with a vivid orange undertone.
Red caviar is rich in easily digestible proteins and contains a complex of amino acids and omega-3 and omega-6 fatty acids, vitamins A, E, D, K, B-complex vitamins, iron, sodium, potassium, magnesium, phosphorus, calcium, iodine, and lipids.
